Fried Leeks with Spices

Ingredients:

● 250g leeks

● 1 red onion

● 1 tsp veggie masala (or to taste)

● 1/2 tsp turmeric

● 1/2 cinnamon stick (or 1/4 tsp ground cinnamon)

● Oil for frying

● Salt and pepper to taste

Preparation:​
  1. Prepare the leeks: Wash the leeks thoroughly and cut off the ends. Then cut into fine strips.

  2. Fry the onion: Heat a little oil in a pan and cut the red onion into fine rings. Sauté the onion in the oil over medium heat until it becomes translucent.

  3. Add leeks: Add the prepared leeks to the onions in the pan and mix well.

  4. Add spices: Now add the veggie masala, turmeric, cinnamon, salt and pepper. Stir well so that the spices are evenly distributed.

  5. Cook the mixture: Let the mixture steep over medium heat for about 15 minutes, stirring occasionally, until the leeks are soft but still have some bite.

  6. To taste: Finally, add a little salt and pepper to taste and serve.
