Blue Rice With Cardamom


Ingredients:
● 300 g basmati rice
● 450 ml water
● 1/2 tsp Nivartana Blue Butterfly Pea Powder
● 8 g salt
● 1 cardamom pods
● Garnish: roasted cashews, peanuts, pumpkin seeds (to taste)
Preparation:
Wash the rice: Rinse the basmati rice thoroughly under cold water to remove excess starch.
Add water and spices: Put the washed rice in a saucepan. Add the water, the Nivartana blue, butterfly, pea, powder and salt. Crack the cardamom pod and add the seeds (or the whole capsule if you want the flavor stronger) to the water. Stir well so that the powder and salt are evenly distributed.
Boil: Bring the water to a boil. Once it boils, reduce the heat. When the water is reduced by half, stir the rice again, cover the pot and reduce the heat further to speed 2 or 3. When you use a rice cooker, you don't need to monitor the heat – the rice cooker does it for you.
Cooking time: Let the rice simmer for about 30 minutes until all the water is absorbed and the rice is soft. If the rice is not completely cooked, you can add a little more water and continue cooking until the rice reaches the desired consistency.
Resting time: After cooking, let the rice rest for a few minutes. This helps to firm the texture and intensify the flavor.
Garnish: Before serving, garnish the rice with roasted cashews, peanuts, and pumpkin seeds.
