Peel and wash the parsnips, then cut them into even batonnets (sticks).
Peel the white onion and slice it into thin strips.
2. Frying:
Heat some oil in a pan. First, sauté the onion strips over medium heat until soft and lightly caramelized (about 3-4 minutes).
Add the parsnip pieces and fry them until lightly browned (about 5 minutes).
3. Seasoning and Simmering:
Add the Ayurvedic curry powder, turmeric, salt, and pepper, and mix well.
Cover the pan and let everything simmer on low heat for about 10-12 minutes until the parsnips are soft and aromatic. Stir occasionally to prevent burning.
4. Taste and Serve:
Taste and adjust the seasoning if needed before serving. The fried parsnips can be served as a side dish or as a main dish with rice or quinoa.
