Harvesting and Processing
Ceylon Cinnamon is harvested twice a year, in May and December, from carefully selected cinnamon trees in Elpitiya. The process begins by cutting branches about 5 cm thick from the tree. These branches are stripped of their outer bark, and the inner bark—the true cinnamon—is gently peeled off. The bark is then cut into 20–30 cm long pieces, which are stacked and rolled into cinnamon sticks. Afterward, the sticks are dried in the shade for several days to maintain their delicate aroma and vibrant color. This process ensures that the cinnamon remains aromatic and does not become brittle or discolored.
Ceylon Cinnamon Grades
At Nivartana, we exclusively select the highest-quality Ceylon Cinnamon sticks from the Elpitiya region. For our premium products, we use the finest cinnamon grades: Alba, C5, and C4. These represent the most delicate and aromatic cinnamon, ideal for culinary use and offering a superior taste experience. The remaining bark is processed into ground cinnamon, perfect for various recipes and uses.
