Ingredients:
- 250 g leeks
- 1 red onion
- 1 teaspoon vegetable masala (or to taste)
- 1/2 tsp Turmeric
- 1/2 cinnamon stick (or 1/4 teaspoon ground cinnamon)
- Oil for frying
- Salt and pepper to taste
Instructions:
- Preparation of the spring onions: Wash the spring onions thoroughly, cut off the ends and cut into thin strips.
- Fry onions: Heat some oil in a pan and cut the red onion into thin rings. Fry the onions in oil over medium heat until they become translucent.
- Add leeks: Add the prepared porree strips to the onions in the pan and mix well.
- Add spices: Add veggie masala, turmeric, cinnamon, salt and pepper to the leek-onion mixture. Stir well so that the spices are evenly distributed.
- Cooking: Cook the mixture over medium heat for about 15 minutes, stirring occasionally, until the leek is tender but still slightly al dente.
- Season to taste and serve: Try it and season with additional salt and pepper if necessary, then serve.
