Sauteed Leeks with Spices

Ingredients:

  • 250 g leeks
  • 1 red onion
  • 1 teaspoon vegetable masala (or to taste)
  • 1/2 tsp Turmeric
  • 1/2 cinnamon stick (or 1/4 teaspoon ground cinnamon)
  • Oil for frying
  • Salt and pepper to taste

Instructions:

  1. Preparation of the spring onions: Wash the spring onions thoroughly, cut off the ends and cut into thin strips.
  2. Fry onions: Heat some oil in a pan and cut the red onion into thin rings. Fry the onions in oil over medium heat until they become translucent.
  3. Add leeks: Add the prepared porree strips to the onions in the pan and mix well.
  4. Add spices: Add veggie masala, turmeric, cinnamon, salt and pepper to the leek-onion mixture. Stir well so that the spices are evenly distributed.
  5. Cooking: Cook the mixture over medium heat for about 15 minutes, stirring occasionally, until the leek is tender but still slightly al dente.
  6. Season to taste and serve: Try it and season with additional salt and pepper if necessary, then serve.
